
I’m not a big fan of sweet potatoes but a couple weeks or so ago I found a recipe for a sweet potato casserole to make for my husband occasionally since he likes sweet potatoes. It’s more like a dessert than an actual side dish so take that for what you will if you ever decide to make it.
I take a bag of pre-chopped sweet potatoes and stick it in the instant pot with a cup of water and cook them on high pressure for ten minutes. After it’s done, you put in 3 tablespoons of butter, 2-3 tablespoons of brown sugar and half and 1/4 teaspoons of sugar, vanilla, nutmeg, and a couple other spices and mix it all up until it blends in with the sweet potatoes. After you serve the sweet potatoes in a bowl, you top it with marshmallows and pecans. The marshmallows will partially melt due to the heat of the sweet potatoes (obviously) and that’s it.
It’s a little too sweet to me, but sweet potatoes are generally too sweet even without the spices and sweets in it. This casserole tastes more like hot candy than sweet potatoes.
For the main meal, I cooked tilapia with salt and pepper with salad and mashed potatoes. It was overall a good meal. I generally don’t make such a big meal but I wanted to make something nice.
